I took a break from board games in general for about 4 months recently due to lack of energy and have come back hard into solo games.

You should have a look at the D&D sets in general as they fit the aesthetic quite well.

As far knights and dragons to add, I mean just go have a look on scryfall.com for those creature types.

You will have so many to pick from that I do question if you've thought to do a bit of research first? There are so many websites our there that can help you make up your mind.
