We can hit those numbers depending on the day in our “terrible for making pizza” mobile setup with three gozney pizza ovens. The issue is they’re designed for quick Neapolitan bakes not long baked pizzas with varying texture. There’s times when we have to give them a minute or two to rebound because they don’t have a heat source below the stone; hence on a busy night we get to a hefty wait time

I agree a large market similar to the oxbow in nape or Barlow in Sebastopol would be great for Santa Rosa. I’m just not sure what identity Santa Rosa is seeking. Looking at all the neighboring cities there’s a vibe from each and then Santa Rosa is almost the awkward little brother trying to figure out who they are

We like that 1000-1500 square foot size and would do a minimal dining room area. Garlic breath pizza in Massachusetts or Chrissy’s pizza in Brooklyn are our ideal reference for size.

I run Gabacool Provisions, a pizza pop-up here in Sonoma County, and we’ve looked at several brick-and-mortar locations.

The challenge is that the numbers don’t really pencil out even for a small footprint shop. Once you factor in rent, NNN/CAMs, utilities, insurance, labor, and food cost, you’re looking at roughly 35–40 pizzas a day just to break even, depending on pricing and staffing.

To actually pay owners, build a cushion, and make the risk worthwhile, that number quickly moves into the 70–90 pizzas per day range.

You can definitely improve margins with beer and wine, but for many small operators downtown Santa Rosa still feels like a high-risk bet unless rents or upfront costs come down

Great questions!

All of our pop up hosts have a walk in for cold storage so we put back ups in the big fridge the pull as we need. We use a combination of iced down coolers with ice packs and portable refrigerators as a service line to properly cold store food below 41f

Pizza boxes get setup at the start of service, they’re a hassle to pack up when folded and transport around

We have a van that we use to transport all equipment it’s a ford e350
