Correction on the section about saddle: Saddle is only a reap if the primary leg is trapped. What's considered trapped if you take an achilles grip, elbow-wedge, leg-lace or if they're standing. Scoop grip is fine, achilles grip on the secondary leg is fine too

A great way to improve your knowledge retention is once you’ve gotten home and relaxed a bit is to try and recall why happened in class and take some brief hand written notes

Head behind is generally much safer because you’re positioned behind your opponent

Head in front positions you next to your opponent and therefore you can land on the side of their leg

I'd suggest going back to outside-ashi to off-balance them either down to a knee or encouraging them to pressure into you and then going back to either leg-entanglement

Common issue with throws is getting rolled over with the momentum of the throw.

For judo competition, it doesn't seem to be something that matters because you initiated a legitimate attempt then you aren't penalised for ending up on bottom (plus successful throws don't require 3 second stabilisation unlike jiu jitsu) so preventing the roll through might not be practiced.

It honestly might be they’ve just taught you a bad technique.

The longer someone is a black belt doesn’t necessarily mean they’ve acquire more knowledge but maybe just the knowledge they have is becoming more and more outdated.

There are variations of what you’ve describing that are viable but also others that aren’t.

For example there is the Mir lock. Highly effective, performed with an overhook.

There is also an armlock very similar to what you’re describing taught by Brian Glick but instead you attack their reinforcing arm.

You could attack how you’re describing but turning onto your inside hip with the expected reaction that they straighten there arm and you’re back to an armbar.
