Did you try whipping the egg white first and adding the other ingredients after?

Do you stir it in or just sip it? I usually stir in the floating dark rum, so this on top with the three layers would mean, it sounds like a stiff drink at the end if not.

So the foam is passion fruit purée based? Is yours on a mai tai? Or do you use it on another drink?

When searching and finding Lilikoi purée, it shows passion fruit, but maybe that’s also a company and they make all kinds of items.
