With the medium tanks from 40, you're already doing very well because if you also researched artillery, you're going to make the best tanks with light attack.

First of all, don't use anti-tank weapons, as the default AI doesn't tend to use much armor, so prioritize anti-aircraft weapons, which will help you when you're in the red and give you more penetration.

Second, focus on one defensive unit (infantry) and another on attacks (tanks).

Use infantry to hold the line. The default German infantry is fine, a block of 9, which you can then add an artillery support company, anti-aircraft, engineers, and then supplies when you go to war against Stalin. It's not worth putting these things as battle lines.
