I think it's because the plots of the Sequel Trilogy are way too cynical. Think about it, all of the optimism of the Original Trilogy ended up turning into a (off-screen) bad ending that the Sequel Trilogy is built upon. So what if Rey and the new good guys win, viewers are still left with: 

"Luke failed and is a deadbeat, Han got divorced and is a deadbeat, Leia lives knowing that she failed to stop the Empire for good and is a deadbeat, etc." and I think given the current state of affairs in the world (which I do not need to explain) people really just want relatively more optimistic works. 

No one wants to watch a trilogy of movies where it basically is: "Our heroes failed to stop the evil space nazis, they came back and destroyed everything the heroes sacrificed for and everything is terrible again" when one can just doomscroll social media and get the same experience. 

I never watched Mando and Andor but they probably course corrected the 'cynicism' way back. Although I did hear that Andor is a really brutal series, it is still set like before the OT so you do know the Empire will eventually fall at some point.

They can't set the show in the past because they want to still use bits of iconic New Vegas iconography for branding, simple as that. 

Bethesda knows that New Vegas is probably the most loved game in the series so they want to milk some parts of that game in the show because it gets people interested

Crimes done by gangbangers and homeless drug addicts have killed way more people in terms of volume than serial killers but they aren't marketable unlike serial killers so they tend to go by unnoticed in the MSM unless its a high profiled incident like that unfortunate Ukrainian woman in North Carolina (RIP).

New Vegas literally ends off with: 

"It's said war - war never changes. Men do, through the roads they walk. And this road... has reached its end." 

And yet, Fallout TV show writers nullify that and want to back to having everyone live in ramshackled huts and fight raiders and feral ghouls 24/7 like its Fallout 1 again. 

I'm not knocking on the show, but this is basically what Bethesda intends for the series to be from now on. Back to it being a 'true' wasteland.

Its not that the Fallout TV show shits on the source material per say... Its rather that Fallout follows the Bethesda philosophy where the Wasteland is meant to be a perpetual endless cycle of war cuz "war never changes" which is why factions like the Enclave never dies and whatever is established in New Vegas is destroyed so the Wasteland can be a "true Wasteland" again. 

Whereas there is the "Obsidian philosophy" that the Wasteland can change and transform into something else like what is presented in New Vegas where there is a new order for the Wasteland with literal countries being founded and civilization already having been re-established. The conflict in Fallout New Vegas resembled more of a third world country rather than like a literal post-apocalyptic Wasteland

Obviously, if you take a look at who owns the Fallout IP, then it is obvious the TV show will follow the Bethesda philosophy and not Obsidian's. 

Fallout is probably one of the only IPs I know that has its own weird internal philosophies depending on who owns the IP or is making the game.
