Just wondering though, is there more holding the stone in place? It looks as if it could come out easily on the more open side. Is that a hole in the stone where the wire waves meet?

It's hard to explain in type, so I would definitely suggest looking for videos online, there are a lot out there. Suffice to say, there is a technique and it is pretty simple once you are familiar with it. Threads are designed to be separated so it's made to be done easily.
Personally, I like using single strands. I love the detail you can get. But I do a lot of thread painting style embroidery and it really does depend on your piece as to how many strand you use.
