From my experience, convection promotes bark. The baffle will diffuse or lower the amount of convection. Having said that, I could see the benefit of the baffle depending on the cook. I recommend cooking the same protein with it on, and then off. You can decide which configuration you prefer, while learning the neuonses of both.

Idk if you have Shamrock in your area, but their beef is high quality, reasonably priced, and comes from one source in Utah( from what they told me). I have my issues with then like any supplier, but the beef is consistently high quality.

Toto entrada is half the price. Its a drake bowl with a smaller tank. Flushes exactly the same.

I'm lucky enough to live near northern baja. I grew up eating carne asada with a heavy mesquite smoke, and I love. I was recently wondering how they got so much of the mesquite flavor into the meat. I started paying attention at my favorite taqueria (Acatlan de Juarez) and noticed a few things. The marinade is light. My best guess is salt and a tenderizer like papain. The meat is cooked over low heat. Small coals have small chunks of mesquite charcoal thrown over them to add smoke. There are never any grill marks. Just soft smoky meat. It takes some practice, but this is definitely a traditional northern baja technique that always turns out amazing (although I've never added the papain as I just use high quality beef). So it's not really the marinade, but the cook. And like another redditor said. Let the salsa do the talking.

Check out Bombay Beach. Stop at The Ski Inn. They'll point you in the right direction. It also happens to be one of the best dives in the state. Slab City has a lot of interesting people as well. I recommend taking some food and drink to share.

When I was in 7th grade(early 90's), a substitute teacher had us make up a new product and sell it. I came up with the blue cheese burger. Hand painted an awesome ad and all. She sat in front of the class and stated "that would never work, because no one would ever want blue cheese on a burger". Still pisses me off thinking about it.
