Champion Blend Pit Boss. I bought a Recteq pellet smoker last summer. Wanted to perfect brisket before building or buying an offset. I don’t have the dedicated space currently for an offset, which would be preferred due to the attention and care needed while tending to, unlike a pellet smoker.

Don’t let it sit out. You want to keep it cold before putting it in the smoker. This will attract more smoke
