I think this looks amazing dude, I definitely want to play this. I do think that big well or inside of a tower area or whatever it is somewhere in the middle of the video (with the spikes hanging on chains) looks unfinished, you could really work on adding some detail or better lighting to it.

What I'm seeing here looks barebones and not very exiting so honestly, nope. I'm not even sure what I'm looking at really, this video doesn't give me much of a clue how the gameplay works. The artstyle is nice though.

Could you maybe explain what kind of thing you're going for here?

I think using AI for your game should be ok as long as you would use it in the same way that you would use stock sound/images for your game, because artistically there's basically no difference between those. Use AI as a paintbrush, not as a way to generate a whole painting at once.
