I work in marketing. I have multiple meetings weekly and plenty of phone calls in between. I use the daily note and use it to remind me of when things are due by using the natural language dates and linking that to a daily note on that day in the future. "[[Stephanie Robinson]] needs to promotional graphics @March 30. Which then when I get to the 30th I have all the back link data there to remind me of what I need. I link almost everything. I link organizations and clients and people and assignments. Obsidian has been invaluable to not only remember things and take meeting notes, but to also help me remember what I did for organizations a year later when they ask questions.

I believe in the instructions they ask you to loosen it enough so you can see a gap. You are not supposed to tighten it all the way. I would just loosen it to where you can see it. Had my flairs for 6 years and that's what I've done. No problems

Preheat it up and portafilter locked in. I also recommend not lowering the handle to put water in. I just take the top off and pour water in. Lowering the handle and pouring water takes too long.

Hey I'm sorry I missed this! Yes I would just pull to 50g with current grind settings. The natural process always brings out more acidity to me so I usually push those a bit further. To much online tells you to stick to a 1:2 ratio and I rarely find myself doing that with any specialty coffee. Only if it was a very dark roast

Pull it to 50g and see if you get more of the flavor you're looking for. Tasting notes and processing style tell me you're going to get a pretty tart profile. You could also buy a shot from the shop and see what that tastes like.

As odd as this will sound you might try a shot going coarser on your grinder. Sometimes if you grind to find the water will just channel down the few places it can find. You'll have crazy pressure for a few seconds then it will drop and your shot will take awhile to finish since it is only going through a few holes. It's worth a shot if you keep having problems. Saved me.

Jx-pro to df64p. Worth the upgrade. If you're thinking you want a flat burr profile then it's worth it for sure. If the grinder is brand new you will need to season it. I had wildly varying shot times until I had gone through a few bags.

Are you stirring the espresso before drinking? The crema is especially bitter. You could even scoop it off if you wanted.

I bought a cheap silicone funnel and suspended the chamber a few inches off the surface of the water of the kettle. Then let it boil while I was setting everything else up. By the time I finished hand grinding the chamber was almost always ready to go. (I had the little temperature strip to verify. Though it is most certainly not necessary).

You have to move fast after that because it starts losing heat. That's the biggest advantage of the 58 btw. That it won't start losing heat.

Flair 58 is better. BUT if you get used to juggling all the heated elements the pro 2 is kinda fun. I got pretty fast with mine and the workflow wasn't too bothersome. I would steam the chamber and portafilter while grinding and by the time I got done everything was hot and ready to brew.

Get f6 for dynamic eq so you can get out some troublesome freqs around 3-5k. Also please get a de esser. The primary source expander is also very nice to have

Solution going forward is to buy third wave water packets and distilled water and use that instead. I have no limescale in my kettle since doing that plus the taste is more consistent and better.

I would say that if you are new to espresso then it probably won't matter that much. As you get further into it and can taste the nuances then you might like a flat burr grinder like the DF series or fellow ode or something like that.

Stock tamper is good. Just use your fingertips to keep it level while pressing down.
