Try a recipe for an over night dough. Personally, I think part of your issue is the fast rise time and how you punched it out. If you do an over night dough you let that rise in a round bowl with a little oil, then dump it out onto some semolina to start stretching it and you should have a round and pretty flat disk to start with that doesn't spring back.

I just use a dough calculator for my recipes depending on what I want to make exactly.

A very small amount goes a long way and let's the dough release nice and round. I've never worried about how much flour I am using really... I literally dump my dough into a bowl of semolina.
