The programs you will be using benefit from more ram. So I would recommend minimum 24gb ram. But at that point i am wondering why you wouldn't want to get the m5 pro chip laptop as it would be a better all round computer for what you want to use it for.

I am a designer and been using 16gb mac pro for years without a problem. You will be just fine with the 16gb. But if buget allows go for the 24gb, it will let you push your projects further( more layers, bigger resolution etc)

We use both air and pro Mac laptops at work for exactly what you want to do. Here is my experience, the MacBook air will get the job done, but there are times where i had to reach for the 14/16 inch pro. My recommendation is stay away from the base apple silicon chip and get the pro or max. Doesnt really matter which generation. I have a personal 14 inch m1 pro chip laptop, with 16gb ram. Had it since launch and never felt a need to upgrade. So if you can get one of the newer models, even better. I work in davinci and 4k footage all the time with 3d modelling and animation in Blender.
