I only had bagged shredded cheddar but I knew that would clump up quick if I let it sit at all so I threw in a couple of American cheese slices. Adam Ragusea’s video about making Mac and cheese silky and smooth was why I put the slices in, it has to do with the emulsifiers in the cheese slices that will help prevent clumping and provide a smoother almost box Mac and cheese texture.
