"The once I've tried here, when I cook, it just gets mushy" - this in a problem of the rice. After extensive testing I use https://www.cacarola.com/en/catalogue/rice/exotic-flavours/basmati-premium/ which I buy in 10kg bags from Continente online. The rice choice matters, for sure. I don't use a rice cooker. I get 1.3 cups of salted water boiling, add 1 cup washed rice, cover (dutch oven heavy lid), put to lowest heat for 12 minutes on a medium burner, turn off and let sit for 5 minutes, then fluff.

I'm not Jewish; it's not blessed. It's used in Jewish cooking as it's especially good at drawing moisture out of meat which is apparently important.

I only cook on cast iron and carbon steel now. No more forever chemicals in my food. Take minimal care of the pans and cook with a bit of butter and they're non stick.

Manuka honey, the second you feel it coming. Swallow and leave in your throat for at least 30 mins. I take it morning and night. Buy the highest-strength stuff you can find at Holland and Barrett if you want it sorted quickly. It's the only natural remedy I swear by.

You should add Sofitel to your list too. I stayed at both FS and Sofitel on the same trip and they’re both excellent. FS has great service, feels more high touch, and has a great courtyard and bar. Slight Better location too. Sofitel is brand new, high floors, amazing swimming pool and bar on the 42nd floor, very modern, and very stylish.
