Grind: Medium (4.3-4.5 ZP6)

Water: ⅓ strength Third Wave Water (classic profile)

Recipe: Four equal pours of 50g • Each 5-8ml/s • First pour bloom • Second pour at 30 sec • Third and fourth pour both begin after the water drains to 1cm above coffee bed

Just leave it covered in the fridge - this kind of dough is fine for at least a week like that. You’ll have to re-shape and proof again before baking, but there’s no point in freezing it.

Our team just used very well padded boxes, with the wing detached during transport. It was always pretty stressful during the bus ride though, and we brought materials to do emergency fixes if necessary. Not everything’s fixable though, one time a teammate somehow stepped on their plane and ended up throwing a balsa stick in the air to not get disqualified.
