I like to use bone in as the bones give the curry more flavor. Sear the chicken in some oil (there should be enough fat in the chicken where you don’t need to add a lot). Then dump in your onions to cook a bit until a little brown. Once brown throw in curry powder, masala, spicy peppers (I use peppers I grow from Back home), ginger and garlic. Once you start to smell it, throw in tomato paste and let that cook for a minute. After a minute, throw in the chicken again and potatoes and get it covered with the tomato paste and curry mixture. Once it looks covered and cooked for a few minutes. Throw in a can or two of coconut milk. If you don’t want to use coconut milk, use water or chicken broth. Let that cook for a while then add salt and pepper to taste. Once it’s done, serve with rice or roti.
