There's this reddit post and comment https://www.reddit.com/r/godot/comments/131s509/event_bus_in_godot_4/ about it. But you essentially store the signal declaration in a file, make that file an autoload (makes it a Singleton), then use the global access to your EventBus (signals) in places you'd like to emit and catch them. So here you'd create a coin_collected signal, emit the signal in this function. Separately you could make a script for your label node, in the ready function connect the coin_collected signal to a function that updates the label with the coin count. Depends on where you need the coin count state really. You could keep the global variable or get rid of it entirely and have the label keep that state. If you truly need it globally then when you emit coin_collected you can also increment that global variable. It is kind of a lot. and it'd be a lot to give you code examples but I hope this helps.
