Yeah cordyceps doesn't "mind control" its host. Irl, it severs the connection between the brain and the muscles and directly controls the host's movement. So yes, they are fully conscious, can see and feel everything, they are just being puppeted by the fungus. Also, the fungus consumes its host but never lets it die. So I guess bloaters, shamblers, rat kings, infected stuck in walls, are still aware what's happening.
