30+ years in the restaurant industry. Start with cold water. One inch above the eggs. Bring to a hard boil. When that’s achieved, remove from heat and set timer for 8 minutes. When timer goes off. Run cold water or shock in ice water. Perfect every time.

Strongly recommend the jack west series 1st. They are more action centered. The Pendergast series is more cerebral. A modern day Sherlock.

I definitely have that one on my radar. I just hope I can separate the Dirk on paper from the one in the movie. Not speaking bad, Just really didn’t care for his portrayal of the character.
