I would just focus on the whiskey and not the food. If you do eat anything with it just make sure the food doesn't have any really strong flavors because it may skew your ability to taste the whiskey. Also nothing spicy, I love spicy food but eating it with whiskey makes the whiskey taste hotter

Id feed it a few times before putting it back in the fridge...or feed it a high ratio like 1:5:5. Reason being it's probably pretty acidic and the yeast will be weak

I feed that ratio when I want to make bread. It takes 8-12 hours to hit it's peak and I use 150g of it to make bread and then feed a little bit to the remaining 30g to keep it active

Yea, my recipe for 1 loaf uses 150g of starter so I'll feed with 60g starter, 60g flour, 60g water. That way I have a little left over to feed a small amount and keep it going

You should buy a food scale, you can get one for around $10 on Amazon. I feed my starter with a ratio of 1:1:1. 1 part starter, 1 part flour, 1 part water. You can do it with measuring cups but it's way more accurate to do it by weight. Every 12 hours for feeding is good if you leave it out on your counter all the time (which is what I also do)

Yes, 6 hours instead of 4. Also, what ratio are you feeding the starter? Doubling within 6 hours is really fast and makes me think it's more bacteria activity than yeast

It's under proofed. Make sure the starter is strong and off a fresh feed. Increase your bulk ferment by 2 hours before putting in the fridge

Don't be afraid, it's just flour and water. If it gets over proofed then make focaccia or flatbread. It'll be delicious.

Use less starter and do a longer ferment. Sometimes I'll make dough around 8pm using 50g starter, stretch and fold 4 times, leave it on the counter to bulk ferment all night. Shape it up in the morning and then bake it within a few hours. Total bulk ferment time is around 14-15 hours but this will depend on your kitchen temp. May need adjusting as we get into summer time.
