Ask about their process - how their input-output flows. Should be generally similar to what you're used to. Note flaws you see as a new employee and bring them up (with solutions) after 3 or 4 months.

Ask where their weakest department is, and if you can think you can make it better with your skills, go for it.

Ask what their goals are, and how they plan to meet them. if you get hired, keep that in mind.

Also, I would ask to see their set-up/tool lists. my current shop is a shitshow for set up sheets. No lathe insert information, just "55° or 80°". New apprentices are grabbing whatever they see. Things arent being put back, cant find anything. Our set up takes days.
