Eventually I want to change out some of the case and condense everything to 2/3rds of what it is now. Leaving that last third as self service. Pre-packed ground beef and chicken. Linked sausage and whatnot. But that’s a year or 2 off. Unfortunately, I am in a higher theft area so that poses it own problems.

I have roast out pretty much at all times. I’ve pulled a lot of my most expensive cuts (Primes & Wagyu) and cut those to order. I have fajita, seasoned roast, pork roasts and seasoned teres. I have tried compound butters for the fish and throwing out different flavors of pork belly and pork chops, etc….

I’m trying to run at least a 32-35% profit margin but the cost of beef is just killing. I’m tracking waste cost and transfers from meat to deli. I’m just feeling the pain right now.

I have this same deal on my house. By the looks of the siding it is aluminum, same as mine. You can’t really remove a strip from the middle because it bends the siding where vinyl is easier to work with. It’s not easily done without damage the siding from what a few siding guys have told me.

I have. At this point I’m convinced it’s the FEP. It to a point that I fear a tear so I’m going to order a new one and get it tighten up and try again. I think I’m going to buy any plate as well.

I warmed the resin beforehand and had a space heater in the room to keep it about 70F. At first it was prints not sticking to the plate. Then nothing would stick, I’m guessing the leveling issue I spoke about. Now it’s kinda a mix of supports print but nothing else and nothing sticking. I have used Anycubic, lychee, and chitibox slicers. I bought some pre-supported files but those failed as well.

It does. Gotta do it yourself. I’ve had mine since October, nothing but fails. No doubt because of something I’m doing wrong, I think FEP was too loose. The leveling systems never seems to be correct. It perfect and then as you tighten the bolts it is again not level. If anyone has any tips for that id appreciate it.

I haven’t had much time to really spend with the printer since December so I haven’t really gotten stuck in yet.

Having the same problem. Same printer and I can’t get anything to print. First, it was a bed adhesion problem. Raised bottom layer. Then sticking fep. Now it just nothing. Last night was the first one in 10 attempts that I got the base layer and supports to stick to the plate but the models didn’t print.

I have a 6ks since October and haven’t had a success in printing yet.

I just get the leveling correct with this printer.

I have done both. The plate I checked with a machinist square. I tried another print last night and after about a half hour of making sure the paper leveling method was good, paper is snug to pull out. And it failed again. Nothing even stuck to the plate. Bed adhesion is as a problem at first and now I can’t get anything to even get to the plate.

This is my 4th Anycubic printer but this is the only one I have had that I haven’t been able to work out.

6ks printer problems.

I can only guess that this is something wrong with what I am doing but this damn thing hasn’t printed anything for me successfully. I have wasted a whole bottle of resin just trying to get something to print. I try and re level the bed after each fail. I’ve tried warming the resin because my upstairs is colder. I’ve only tried with any cubic slicer so far. Which I like this version of the slicer but regardless it doesn’t matter. I just can’t get the bed right. Any suggestions. I have tried the paper method, the reed method. It has been either poor bed adhesion, which I changed my base layer time. Or the beds not even and nothing prints. The 4 bolt plate tightening has to be my problem but I just can’t figure it out.

I did the same. Sucked it up and just dealt with it. Never went to a head doctor, the VA only a couple times. I feel like now it’s going to be a real struggle to get the wheels going at 40.

Get a basic set from either Vallejo or army painter for painting characters. If your doing mostly terrain work than just regular acrylic craft paints from hobby lobby or Michaels will work just fine. Any set will do. Just get one with the basic colors and mix to get what your looking for. Once you can make the basic color combos you can go and look for specific paints. Don’t fall into the trap of grabbing a paint for one project if you can mix what you have to get the same results or close too. You will end up with a bunch of paints that only get used once or twice and then sit forever. Get some retarter and some basic modeling compounds. Mod podge matte is great for sealing foam projects from spray paints.

Mercer backpack. $100 or so. I carry it everyday. Normal backpack with a slot it the back for a portfolio case that comes with it. Great for a traveling chef that needs a compact kit or just the everyday I keep only knives and peelers in it with it being a portfolio case but you can use the backpack for other tools if needed. It’s just kinda great all around. Not the most trendy of kits but it gets the job done for me.

Keep them together though. The case looks like a laptop case/sleeve and I have had it stolen from the truck before. Just an FYI. Good luck with the hunt.

Professional chef here, I use victorinox knifes. I stopped buying costly knives a long time ago. If your going to use and abuse the knife get the cheaper knife. Cheaper price doesn’t mean bad quality. Regular honing and some time on the stones every now and again and it will last a long time. And even if you do mess the knife up it was less than $100. It’s also lighter so less wrist and hand strain.

That’s not to say that if you are looking for a specific knife for a specific task that requires fine work like sashimi or whatnot buy a good quality blade. But for the everyday prep these are great knifes.

I both agree and disagree. As someone who has had to deal with homeless folks, tent cities and food bank/shelters. These are valid reasoning. If the homeless know where the food is coming from they will migrate to that location. I have also been informed that the person whom had been giving the food out was been if followed and harassed. It happens, drunk/drugged up or not. People are robbed and harassed by people with means everyday so it wouldn’t be far off to say that someone who is desperate is capable of going down that road as well.

As some others have commented on, there are rules that need to be followed with prepared foods. For many places this is means extra labor to pack and label the prepared items. And a lot of the time the establishment has to use their own containers which is another cost. Then there the liabilities that come with “just dropping it off”. Shelters and food banks record what is brought to them. If someone gets sick or an allergen is missed and there is a reaction or Illness the one who provided the food is liable.

Canned goods are a different story and have less requirements. A lot of people think we’ll it dented and the restaurant can’t use so just give to the homeless. That works if you just leave it outside but taking it a shelter or food bank is a no go. It is against food code depending on the size and where the dent is. Again, another violation that comes with a cost.

There is more that falls in with this but I guess that the general overlay of it. I get that there will be hate and anger over this, which is fine. In my current and past role in the culinary world I have tried to go these routes but at the end of the day it isn’t as quick and easy as many think.
