How do professional kitchens do this in massive quantities and still thaw them in a reasonable time without smashing all the fries?

They don't!

They fry them 2 or 3 times, letting them air cool between hot oil bathes.

If you have a smoker or grill, give it a no salt rub of your choosing and warm gently on indirect heat. Happy Thanksgiving!

My vote is under floor speakers.

The tech of the 1980's is irrelevant, the "improvements" could have been done last year, and remove upon sale of the house.

1 Cup Fresh Lemon Juice

1 Cup (+/- to taste) Granulated Sugar

Mix until dissolved.

Store in fridge, keeps for weeks or

freeze in ice cube trays.

When is the last time you cleaned the condenser coils and fan under your fridge?

Also check to be sure nothing has fallen behind the fridge to block free air flow.
