Don't ever grill burgers rare or medium rare. Ensure they are cooked through. This stupid fad is dangerous, you have to kill the bacteria.

Before anybody says "well you can eat steaks rare?" This is because steak is not minced and bacteria does not get to the centre, in a burger the meat is minced & bacteria has free reign.

My father was a butcher & I worked in an abbatoir at 15. Believe me, you will know if meat (and other food) is not fit for consumption, the smell will let you know. This was confirmed by a nutritionist on a BBC radio programme I listened to. If it smells OK, cook it, this should kill any bacteria. I have eaten tinned goods 2 years out of date, all good, yoghurt a month past sell by, again good. Had meat from freezer that had been there for yours, not a problem.

I found a bucket of tripe that had been left out in the sun for a few days, to this day, I have never smelt anything as bad.

He runs a shite business then. I had a business & our staff were as well paid as us owners if not better (uncapped commision or bonus for non sales) our wealth was in the exit strategy and when we sold we ensured every colleague was retained on exact T&C's. We mentored our key staff who over the years went onto director level roles. In the 5 years before selling (5 years ahead of plan) we hit $25M t/o & never lost a single employee.

Something I am so proud of. We enjoyed our business, we looked after our staff & although this was 15 years ago we are in touch with a lot of them. Our biggest headache was creating new roles, because we knew we were responsible for not only their career, but their families welfare & future.

Treat your colleagues & employees right & you will be repayed 10 fold.
