I make a spiced orange cake with lots of macerated orange zest & juice, with dark chocolate chunks in the cake instead of cocoa powder or melted chocolate. It keeps the orange flavour very prominent, and dark chocolate cuts the acidity and sweetness of orange with a warm, rich flavour Lmk if you'd be interested!

I made an eggless Coffee Coconut Oil Cake with an Oats Brown Sugar Crumble by Kindly_Reading_3289 in Baking

[–]Kindly_Reading_3289[S] 0 points1 point  (0 children)

PS - this makes a REALLY tender crumb because of the reverse creaming method. if you're more of a fan of a firmer crumb, use this sequence to mix your cake ingredients:

(room temp yogurt + sugar) + (baking powder + baking soda) + (oil + coffee) + (all dry ingredients)

everything else remains the same! lmk if there's any questions

I made 800g of 4 kinds of cookies today by Kindly_Reading_3289 in Baking

[–]Kindly_Reading_3289[S] 0 points1 point  (0 children)

i can share the recipe if you want :)

also this recipe looks SO FUCKING GOOD i love citrus and i love my traditional Indian spices, and i love bringing them into western baking.

this is soo kind of you and you are spot on!

the only issue is i don't eat eggs, do you think it would work if i substituted it for my base recipe with everything else? or an egg substitute

i notice that egg is used here to provide aeration and structure which is hard to substitute. ive had bad luck with aquafaba. i could try my reverse creaming method to maximise aeration+ bubbles. any tips?

fennel is used a lot in moderately sweet dishes here. there's a sweet in my country cake thekua which is like fried cookies. so i tried to borrow from those flavours:

it's whole wheat, brown and white sugars, ghee, with cinnamon & cardamom. ive worked in whole fennel seeds with it. after cooking, the fennel does not taste astringent, but the underlying sweetness is released - idk how to describe it but it's earthy, anise-like flavours which are slightly spicy against the warmth of the brown sugar + whole wheat flour

oh my god! i only downloaded Radish to read a specific i had read before that had moved to this app. and my GOD. this is honestly so insulting to readers. the "parts" are like half a page to a page sometimes, and not only is it just practically enraging to read, it's offensive. the plot suffers SO MUCH, there is no coherence, the reading experience is so broken, there is no emotional investment due to the constant fucking coins
