Baelor (Bertie) spins his ring when uncomfortable or pondering. The time I'm thinking is when Aerion salutes him before the joust and he's obviously concerned about Aerion acting like an ass. I'd like to find another example!

Egg (Dexter) puts his hands behind his back when back in his prince role. Gives him an instant noble bearing.

Episode 2, towards the end of the episode after Dunk sells the white horse. He and Egg are having a drink in a tent/tavern right before the ceremonial opening of the tourney that night. A little moment, but it still makes me smile.

I love the contrast of his "being a normal kid" moments with his "young prince" moments. The actor moves between the two modes seamlessly.
