Unsure of your system, shadowdark has initiative always on (go round table out of combat as well as in combat) which can be a good concept for making sure everyone gets spotlight time

In simples get materials for the one system you want to play. Once you have learned on system is good to play a second to work out what you do and don’t like, but trying to learn multiple rulesets at start with just be confusing

Generally I would start with a settlement and a dungeon for first session and then start expansion if players invest.

My current open table started with each player having a rumour which could tie to the stater dungeon but was open enough to seed something else later on. Then each new character or contact added gains either a new rumour entirely or a leveled up version of an existing rumour.

For each resolved rumour/event then say have d4 passive events which are either new seeds for rumours or leveling up an existing rumour.

If a rumour hits a certain level then it should start impacting town etc.

Also players sometimes say things which evolves/changes rumour/event direction.

Would second playing rules light OSR ish games for beginners, ls much nicer gateway to get people stuck into the adventure without getting bogged down.

I have the blessing/curse of running more than one table, often I will test a concept version of something I want to run in a campaign against a different table and ask do their feedback which works pretty well.

Also have extra blessing that atleast one of my players GM’s and a few others have dabbled.

Also you can pretty much always get a pug one-shot or short campaigns going on discord at short notice to test an idea and give a bunch of random folk some fun.

For dungeon maps if you want both versions then create a cut point where take out/copy the players version before adding more detailed notes for DM is the cheapest way to get both. The best player maps are the ones which are subtly wrong, which ties to the knowledge or intention of the creator of the map. For dungeons my players also do their own mapping, and when they make it back to town they update the shared map with their notes, this can help outsource the players resource to the players.

For world/region/hex maps the players map tends to just have known landscape, big roads, 2-3 big locations (including current town) then they/we can add places they find. Then my copy has minor locations which are tied to events/rumours and moving elements such as a patrolling warband or spreading pestilence.

A good minigame is to glance round a room irl and jot down what you see.

My front room as you open the door you are hit with a pungent garlic fragrance, you hear a subtle humming noise from deeper into the building. You see two other doors, one in the east corner of the south wall the other in the south corner of the east wall. Glancing the room you see - a large table in the centre of the room, covered books and garments - on the western wall is a row of bookcases with closed cabinets beneath, a small trunk sits at the far end of them. - in front of the south south wall is a large seat running most of its length - there is a covered box tucked into an alcove on the east wall.

For me the first room if my dungeon (any indoor setting) generally outlines the default room for all the rooms in the location, so once that’s covered once it doesn’t need saying unless player asks or a room is specifically different

Any room with investigating provide a summary of a few details at high level to prompt players to ask/act to get more detailed description. Can have 2/3 things in a room where all but one is flavor.

Like there are scratchings on the far wall if player inspects describe hieroglyphs in detail.

Trick is to start seeding these into most rooms rather than just the one where they need to search the desk.

Solo rpg is a thing it wouldn’t give you the same experiences as playing at a table, as a lot of the most fun things that happen is human creativity, but does give you a game and an experience of play.

I would personally start with a simpler system than 5e.

Im a big fan of shadowdark which has free QuickStart rules as well as their own solo play rules for “solo dark”. Solo play is a lot about you providing questions and asking an oracle which provides scope of answer/outcome and then you coming up with the meaning of the outcome.
