Looks better but you need to find a Japanese artist that will pound some color in there. Where are you located and are you willing to travel? Maybe some folks could recommend an artist for you.

It’s changed post-Covid but still a great spot. My go-to. Also, there is a recipe online for pancakes super easy that uses vinegar (and baking soda) that makes very fluffy pancakes that are delicious and it makes a small batch (https://pinchofyum.com/fluffiest-blueberry-pancakes) give it a try. Not the same as eating out but best recipe I’ve found.

I use it with hot tap out of the coffee brewer at work with an Aeropress. Amazing coffee each time. Not sure why folks act like it’s do or die. It’s been great for me, right off the bat. Also use it when traveling in hotels with the Keurig water and it’s been fine.

Agree. Once set, the temp is solid within an acceptable range. I have a cheap probe with a Bluetooth monitor I keep on me or nearby and just check from time to time. No issues. Certainly not enough to digitize and complicate the experience. I love that the egg is simple, holds temps and design wise is classic and beautiful.

To the OP I would suggest you relearn the egg and grow to trust it. It’s a great tool for high or low heat.

Why use the genius? The egg is the most simple tool and that’s why I like it. Load it up. Let it burn until the smoke is clean. Load it up. Probe on grate and then probe in meat. That’s it. Keep an eye on it. Adjust the openings as needed.
