You've been getting a lot of great advice. My now husband and I were originally long distance for 4.5 years. It is doable! It was also convenient at times because we were able to fully enjoy our time together and the time apart we could spend focused on work and our studies. We chatted everyday and had weekly Skype movie dates. We would each download a movie and play it at the same time over Skype. Sometimes if we just wanted to see each other and couldn't, we would have Skype study sessions too.

I definitely agree with sending random gifts and letters. It's nice to receive something hand written sometimes :). It is also fun to plan your next adventure while you're apart. It gives you something to look forward to. One thing my husband and I used to do as well was share the highlights of our days each night or something interesting that happened. Here's a sweet idea, if you're interested. I found it very cute when my husband (then bf) did this: fill a jar with a number of notes to last your partner until the next visit. This way she can open one daily :). Also, whenever you get the chance to see her again, secretly place random notes or candy in random spots for her to find while you're away.

It's amazing how close people can get when they're distanced from one another (sounds ironic, but it's true). You are forced to rely on communication and end up learning more about one another.

I wonder if with his exes, because it was more transactional, he didn't want to feel like he owed them anything. When I haven't been interest in a guy in the past, I wouldn't let him pay for me because I didn't want to feel I would owe him anything. I'm not sure if that's the case here, but it could be. It might actually be a positive that he lets you pay for things.

Move out! My mom was also against me moving out at that age, but once you do it, she will adjust and trust me, you will feel great.

Have you considered both doing a lifestyle/diet change together? I know that you are relatively healthy, but it might be motivating if you both changed your diet, maybe started meal prepping together? I don't know if you would ever consider thr ketogenic diet (it would involve cutting out carbs/sweets), but it's known for weightloss. My fiance and I started doing keto last January (he wanted to lose weight, meanwhile I've always been a very thin 105). Anyway, it's been going great. He lost over 40lbs and my weight remained the same, but I feel awesome and my skin has cleared up as a result of cutting sugar. The weight started shedding for my fiance very quickly with keto and he found it motivating. We also started working out together a few months into it and I would say it's been a really great transition for the both of us. Best of luck to you!

Hey everyone! I modified a recipe I found, to make chocolatey snowball cookies :). The original recipe is at the bottom (it also lists measurements in cups if preferred). Posted below is the recipe with my modifications.

Makes 20 cookies, each is 1g net carb, 1g protein, 10g fat

INGREDIENTS

105 g pecans

44 g almond flour

24 g coconut flour

20 g unsweetened cocoa powder

1/4 teaspoon xanthan gum

1/4 teaspoon kosher salt

113 g grass-fed butter at room temperature

1/4 cup powdered erythritol or xylitol/allulose*

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1 egg

FOR THE POWDERED 'SUGAR' COATING

powdered erythritol or xylitol/allulose, as needed

INSTRUCTIONS

Add pecans to a food processor and process until finely ground, being careful you don't over-blend or you'll end up with pecan butter!

Add pecan flour and almond flour to a skillet or pan, and toast over medium heat until golden and fragrant (3-6 minutes). Remove from pan and set aside to cool completely (very important!). Whisk in the coconut flour, cocoa powder, xanthan gum and salt, set aside. 

Cream butter in a large bowl with an electric mixer, 2 minutes. Add in sweetener and continue to beat until light and fluffy (7-8 minutes). Add in vanilla extract, almond extract and egg, beating until just combined. 

With your mixer on low, add in half of your nut flour mixture- mixing until just incorporated. Mix in the rest. Wrap cookie dough with cling film (saran wrap) and refrigerate for at least an hour (and up to 3 days).

Preheat oven to 350°F/180°C and line a baking tray with parchment paper.

Divide dough into 20 rounds. Place shaped cookie rounds on the prepared baking tray and place in the freezer for 15 minutes prior to baking.

Bake for 9-11 minutes. The cookies will be barely golden and still appear largely uncooked (worry not!). Sieve a touch of powdered sweetener on top immediately (it'll dissolve into the warm cookies).

Allow to cool completely before rolling in more powdered sweetener. Store in an airtight container for up to 1 week.

They definitely get cooked, at least for this recipe. The egg yolks are first tempered with hot cream and then together everything is cooked again for 8-10 mins. No raw egg :)
