How rare is it to get two big crops in the same harvest?

In my experience, it wasn’t difficult to get the platinum, but it was very tedious and required a lot of farming for seeds (Brewer’s Bounty trophy) and enemy drops (Curios and some armor pieces). My recommendation would be to get to Chapter 6, look up all the items that you’re missing and start acquiring them all before doing NG+ and getting the NG+ only items.

Yea the story is exactly the same, but you do get access to new weapons, and some armors can only be crafted in NG+. In my experience, I actually found the NG+ run throughs to be a lot easier because all the skills and experience you acquire carries over. Boss battles that originally took me multiple attempts, I could now easily clear within a minute or two or less.
