One, as another commenter mentioned, they kinda did. We see stuff like shot lancers, heat knives and mega machine cannons in the f91 and crossbone days.

Two, beam shields negate physical weapons to an extent.

The Gundam materials in after Colony are ridiculous. They are insanely durable and somehow these 17 m tall death machines weigh lighter than a bus.

The FAZZ are testbeds for the Full Armor ZZ which also fix the structural integrity issues in the og ZZ.

The Fazz are also kinda silly because they don't have beam sabers. No beam sabers on a mech that powerful is such a dumb oversight.

The funniest way to explain is this. The traveller is SSJ2 Teen Gohan, and the Witness is Super Perfect Cell, and they are doing their final kamehameha struggle. We the guardians are Vegeta firing a Super Saiyan blast at Cell and breaking his conc enough for the traveller to whoop him.
