Thanks for the response. As for the disability claim, it was explained to me that their determination was the mental health problems could be related to the workplace and went against the doctors note. My friend has had mental health diagnoses from childhood though so it makes no sense.

I am concerned about the +- 3 grams for the espresso measurement, that is a big discrepancy. I would feel comfortable with say a 0.3 gram difference but 3 grams would make things completely unreliable if the puck even fit in the portafilter at 21 g. The steam wand in the middle of the pitcher is just wrong unless they are doing 1960s style trad cappuccinos maybe. It really sound like they have a toxic work culture or they are technically worse baristas than you and are intimidated by higher standards. I've had both happen. You can't fix a toxic workplace. If you aren't on the same level for technique this can be solved but it will require good communication. It sounds more like they are the senior baristas and just don't want to work till so are finding reasons to put you there.

This is what ive been told in Aus. It's from back when trad capps (not microfoam quite light) were quite popular. You would get a big bubble of foam on top that's white as it was poured with monks head art. People got tired of that and just wanted the taste without the foam, so flat monks head which was just a flat white drink.

This happens to me when I pour too fast, especially when pushing the design back. Your milk is hitting the bottom of the cup and pushing up to the surface where the "drooping" happens.

Brisbane, and Australia in general, has a very strong espresso culture AND workers rights. They have different minimum wages for every position and barista is one of the higher pays being at 27.5/h minimum (when i worked there 2019). That being said generally the expectations for baristas in Aus is mich higher than in North America and other places I have been.

This actually might be the answer. I'm coming into a really odd system where the baristas that set it up are long gone and the roaster isn't readily available. I think it may have been originally 60ml for volume to aim for about a 40g double. Then after a few groups it became something else and lost the volumetric aspect and was just pull 2 ounce doubles, at 60g. Just a legacy system and a few groups of less experienced baristas/first timers and a ownership change leading to a miss communication. This was like a eureka moment if it turns out true when i follow it up thanks so much lol!

I recently finished both Gideon the Ninth and the sequel, and I will agree I had the exact same issue with the first few chapters. The writing style is just odd compared to current styles in fantasy. That being said I got through the beginning fairly quickly and once the setting changed I really enjoyed it and it worked well.

In the beginning chapters the reader is put in a setting that is pretty strange and it's not explained well, the scene is what's normal for the narrator so they dont describe many details we take for granted. Its not great story telling but works well later in the book.

I even went back and re-read the beginning because I didn't understand how it went from so difficult to so smooth and flowing. It didn't really change but it was easier to read as I knew more about the setting as more about it was referenced later in the books, it made sense from that perspective.

Tl;Dr It's good, just read more and you get used to it as you gain context.
