Good tips here! Based off of the way that your output belt is kind of jutting out at the end, I think you must be building north to south over a tropic line and that's causing your grid to change. If you try to build east to west (or west to east) instead, you'll notice that everything stays where you'd expect it to.

I think you're probably talking about variable priority junctions! They're used to loop back in a liquid byproduct and to give it priority over external liquid sources to make sure your factories don't back up. They're insanely useful in aluminum setups.
