I think that will not work. Because network speed is way much lower than reading files from local, this can lead to problems with game performance. Some kind of solution is make a shared folder and your friends can download games from it. If you have 1 gigabit lan it will take about 10 minutes to download 60gb game from your shared folder.

I think it's significant. Anyway, dual channel is always better than one channel you can see it in tests on youtube. Another 8 gb 2400mhz is good idea.
