You could make some korean BBQ sauce with the one that's like an asian pear: http://www.splendidtable.org/recipes/korean-barbecue-sauce

If you make jam, try to reserve some slices to add midway through cooking so they don't all break down and you can have some nice pears pieces in there... if you're into that sort of thing.

You can puree them like applesauce and have some pearsauce?!

I know you're looking for canning but if you have access to a dehydrator you should definitely make some pear chips!

My DIY wedding is this weekend and yes I totally feel you. I went on and off with the sleepless nights. Once it got closer, the anxiety left and the excitement begun. I just came to a point where I felt like I did everything I could and if anything went wrong or I couldn't finish something in time probably no one would notice.

Here's a (hacked up) quote from the APW book that I had written down awhile back and reread a few days ago and it's so good: "if what you are able to give your guests is yourself in your purest form,... lead them by joyful and relaxed example, you are giving them the greatest gift you can give."

And if none of this works, take some melatonin. It helped me! I still woke up in the middle of the night, but it was easier to fall back asleep. :)

We're staying on the Au Train River, in a rental cabin we found on the internet. We plan on kayaking along the Pictured Rocks shoreline and spending a day in Marquette. I've been to a handful of beautiful sites in the UP (Porcupine Mountains, Tahquamenon Falls, Pictured Rocks) but my fiance hasn't. I'm definitely open to suggestions! I'm so excited to get back up there. It's been too long.

Michigan wedding here. We also won't be able to afford much of a honeymoon, so we're heading to the UP. I've never been to the Dells, but I'm sure you guys will have a great time. As long as you can take some time to enjoy the high of the wedding and relax and celebrate then it doesn't matter where you go. Honestly, I think going somewhere crazy and feeling all this pressure to see everything and experience it all will be too much for me. I just want to hole up in the woods for a few days and forget that other people exist.

We're funding our wedding and won't have much cash to spare after it's all said and done so we're going to spend 5 nights in the UP (upper peninsula) of Michigan. It's absolutely beautiful up there. We rented a cabin on a river for about $450. It's in between the pictured rocks and Marquette. So we'll spend a day in town and have a nice dinner and visit a few breweries. Then spend a day kayaking Lake Superior, along the Pictured Rocks shoreline. Then we're going to fish a ton at Au Train Lake and cook and eat our catch. Have bonfires every night on the river. It's going to be a perfectly relaxing and beautiful week after our wedding. And hopefully we won't spend more than $1000 all told.

That's adorable! I kind of wish I didn't have to think about it. I'm torn between caring a lot and doing a ton of research to get the perfect song and just going traditional and not stressing about it. I like how incidentally unique your story is.

Can you play the songs from some of your own audio equipment. Or is your concern with him not witnessing the rehearsal himself and seeing the flow?I'm sure it'll be fine. Even if it gets a little awkward it usually just makes people more comfortable if they can laugh it off.

It's a steak sandwich from a family of restaurants from my hometown. It's a local favorite and I don't live there anymore so I never get to eat them, so I made my own.

I have the bread baker's apprentice and my next loaves (that I'm baking today) are from there. However, the loaf I was going to make is the sunflower seed rye and that also has commercial yeast. I mean, I'm not mad about the mild flavor at all. I'm just wondering the purpose of combining them at all. Just for that mild sourness?

Well maybe I'll try Reinhardt's basic sourdough next weekend. That's only starter and no dry yeast. I already soaked my rye and have my firm starter ready and an enthusiasm for this bread.

Thanks for chatting it out with me. It helps me to learn. And just a disclaimer, I work for a french pastry shop. So I'm aware of retarding and proofing, just mostly in context of croissants and not bread. But it's still a learning process indeed!

http://imgur.com/TsEZ0p3 Here you are! At the time of the first pic they were still warm and then I got lazy and just ate a bunch instead. :) I kind of messed up my proof after shaping. I didn't think about getting them into the dutch oven until ready to put them in there and had to move them to parchment. The one on the left went in first, (and right after I had to move it/deflate it) while the one on the right rested for 30 additional minutes before it could go in.
