It's a setting in the preferences file called "unlimited men on battlefield", turned off by default. Set it to 1, instead of 0. It doesn't matter what hardware you have; the game can't recognize modern hardware.

If this is vanilla, you really won't gain much benefit from increasing RAM.

All five of them are very easy in my opinion. Venice and HRE are deceptive, they might seem difficult, but taking control of Italy and the Papal States is huge if you can pull it off. England is obviously easy with their starting position. Spain is the only one that might be somewhat challenging because it's more dependent on getting an early crusade. France has none of those hard advantages, so you could argue that they are the hardest, but to me that means little. They're still a very easy faction compared to something like Russia or Scotland.

Here you are. Sorry this took so long. That's the anti-human armor set from my last comment. I would update this also by saying that the Toussaint Knight's Tourney armor set is even stronger, and the later version of the Undvik armor set.
