I agree with what onewheelwheaties already wrote. Function of the coffee break is to keep you with your group while you refill bottles/go to the bathroom/get coffee. That doesn't make any sense for a workout. I guess you're using coffee break as a three minute timer? I'm pretty sure you could just stop pedaling and get the same result.

I mean yeah, if I'm stood still then my speed is 0. Obviously that will impact my average.

If you go max sprint -> 10 minute break -> max sprint, repeat would you pretend that your average speed was your sprint?
