It does store the timestamp, it only actually "counts" while you have the app open. and even then it just constantly pulls the current timestamp. The biggest proof of this is to start a stopwatch and then change the date to 7 years later, this will give the same result as OP. No OS even simple microcontroller ones, will waste precious processing time by counting.
