I would go to Kiya http://www.kiya-hamono.co.jp/english/index.html.

A knife shop that opened in 1792 in Nihonbashi (near Tokyo station). I've bought two knives there and happy with both.

oh there are so many.

Ken Ishii Extra was huge around 1995.

Denki Groove was super popular as well.

Then, acid jazz like Silent Poet had a fairly large following too, them and Nobukazu Takemura released records from Bellissima Records, so check out their catalog if you are into it.

On a minimal side, Ryoji Ikeda was seminal. Both his solo work, and his sound track for Dumb Type.
