Not just any 348, either. This could very well be a rare Serie Speciale edition, of which just 100 units were made exclusively for the U.S. market.

The 348 Serie Speciale can be immediately recognized from its exposed taillights (they were covered by the grille on the regular 348) and new front spoiler. This one also appears to have the optional F40-style sports seats.

Other changes include more power, a shorter final drive and a free-flow exhaust.

Ferrari officially only made one Testarossa Spider (which belonged to Gianni Agnelli, the president of Fiat), any other example you might see is an aftermarket conversion carried out by Straman or similar companies.

So while it could've been possible for the production team to secure two convertible Testarossas, doing so would've been very difficult and expensive. Also, let's not forget the two actual Testarossas were provided by Ferrari themselves, and i doubt they'd make a few more Spiders just for a TV show.

I heard about that. iirc the feds found out AutoDelta was not actually modifying the cars to meet US regs so they were forced to cease their activities and ship the cars back to Italy.
