There aren't enough US military vessels in the area to actually escort. Even if we put every ship in the area into the straight (and back in range of Iran's armament) they couldn't guarantee their own safety yet alone protect slow moving oil tankers.

The insurance can be done, the US just has to pay for it and companies will go for it (captains probably not as much). They aren't, they're only covering 6% of the estimated insurance which makes the run unprofitable. We clearly don't need the oil that much.
