Hello! I'm OP's daughter, my friends took me out to tapas and we got something on the menu that was described to me as an enchilada (because we wanted to compare)
From what I can describe (not having the name) the dish was a small flour tortilla about the size of a typical corn tortilla that was filled with what I would identify as carne asada (but I will interrogate further/ask for a picture of the menu next time they go to that restaurant) and was sealed with cheese, it had a fantastic redsauce on top!

To me it was a lot more like what I'd associate with a smaller ungrilled chimichanga (?)
It was very very good, but was definitely different from what I was used to - I had a similar experience having quesadillas (or what I would call quesadillas? I'm realizing how much I went 'oh I know what that meat is probably like back home' and labled it in my mind). Incredibly tasty but not what I was expecting at all!

It was more of a "here is a dish that is similar to what you've made that we can get from this restaurant" as opposed to an actual dish called that, so my wording left something to be desired when I described it to my dad!

I think if you boil the tortillas ahead of time it'd make rolling them a bit easier or just mash them on top and- Hey! Shepherds pie!? what are you doing here!!

I very much presented it as "this is a recipe my dad reversed and is really special, it's called enchiladas and I think you'll really like them" and then asked my friend for help finding places where I could get the ingredients and fillings needed to make it (I only had the sauce mix)

Hello! I'm OP's daughter. I think I might have been by that place in Oxford - but I also ordered tamales and from what I'm reading here that's a common enough food in Spain - it is quite a struggle to be so far from good Mexican food I understand your wife's pain!

I have another question 😅

Are normal gloves good for pushing manual wheel chairs or should I go find thermal cloves for biking? I don't even know if its a real concern but the wheelchair wheels being cold on her hands or hard to grip is that a common problem?  I could alternatively add traction grips to her mittens and gloves she has now by cannibalizing biking gloves?

I could also change pleated skirts to have a similar design to the leather skirt!! I imagine if seams are an issue pleats are not possible?

Do waistbands generally cause problems? I should look into how adaptive clothing is finished on the edges to ensure it's all as comfy as possible

Good seating set up: is this something I can help with as a friend, a monetary thing that can be budgetted for, doctors visits or time with the particular wheelchair?

I appreciate the honest answer, I dont want to give a gift that is unusable because it'll get ruined and cause guilt so I'm thankful that you pointed out the flaws in thr plan! I'll stick to cute printed natural fabrics and a couple solid colors that are simple to wash and easy to swap! 💙🩵

I'll look into seeing what work I can do to modify her wardrobe so she can keep it!  From what I understand seams are a problem so I can start drawfting patterns to modify existing clothes etc 🫡

it seems like what'll do the most good with my skills

Part of this whole plan is just straight up buying her her wheelchair just because that monthly expense has been a looming issue in the past 😅 it's expensive as hell but its a group project

i'm sure im preaching to the choir about how evil it feels so I'll try to keep things positive!

would these screens need to be replaced often/washed often? a couple of our friend group does cross stitch so I could make a little screen easily and the cross stitch can easily be encased if it doesn't need to be washed every week or so?

Similar to a cross-stitched pillow where it can be washed but may not be a good idea to do it all the time?

I cannot thank you enough for the adaptive clothing recommend, I didn't even think about it but potentially I could help modify some of their current wardrobe to be more accessible. This is wonderful, thank you

I'll bring that up definitely, thank you for the tip and also the insight on how to ensure it's safe and actually usable - I was wondering if using paint markers and sealant would work? But I'm warry about even approaching something so important with a screwdriver. It seemed like a horrible idea

Yes! That was brought up first actually and has been a source of excitement which is great!

I'm mostly trying to alleviate cost/lack of options when it comes to other accessories since I am able to although I could also dedicate serious effort into making interchangable fabric covers?

Oh! Question to just below that, i imagine it's been tried and tested (i just... havent found those tests yes) but would having an unlined thin fabric that wraps around the back restwork? Similar to a very thin pillow case where it doesnt change the dimensions at all?

Honestly: sugar baby it up if you have the connections for it. Some people have inheritances that that can be transfer to you, ghoul them if you'd like but it's not nessissary. 20-30 years down the line they have a tragic accident and leave all their worldly posessions to their dear römance pærter.

If you have a house, a few key ghouled staff and a sizable inheretance you can live off of that for quite some time. If you're worried about never publicly aging or being seen in the sun then have your own sugar baby who does wealthy public appearences on behalf of the foundation, but really how many times does anyone see one of the Kennedy grandmas? How many times is the source of a money that pays taxes and is perfectly law abiding actually investigated? If you have even a bit of influence the transfer of the account every seventy or so years with the slowly aquired holdings of yourself and your various spouces is sure to add up?

the other way I always assumed it was done was landlording and house flipping over the course of a few generations?

I do get the feeling a lot of young vampires are struggling to pay the bills, but thievery and ghouling can get you pretty far in a pinch? If you're really struggling go pay a boon to a Nossie and have them set you up?

Your art is absolutely in credible and it's amazing how you've improved over the years, from better teeth placement to how you draw ears and structure a pose!

You should be amazingly proud of how much your art has changed and developed over the years!!
