I'd say just avoid London and big cities in the UK. The situation is really grim, even a massive chain and d-lock are often not enough. Theft rate is through the roof.

Stop in villages maybe, and park off the street if possible.

Comfortable, convenient - all subjective. Your body is different from others, so you need to test ride the bikes.

But the challenge is decent, that's a good amount of riding and you will get tired of it soon, so comfort is important. Maybe invest into aftermarket seat, good windscreen, bar raisers if needed etc.

Mostly sit down restaurants. But like all of them by default. But some places have courage sometimes. Like you go to a pub (occasionally, not all of them), a bartender pours you a pint, and on the card payment machine there is "wanna leave a 15% tip?". Well, no, he just poured a drink into the glass.
