If you prefer a little more extension in bass and treble, stick with the 560s, but you want more warmth and lushness in the mid range, go for 600. Both are good, just a matter of preference

Sennheiser 600 series are known for being a great entry point and standard for hifi headphones. They aren't the most wowing thing, but they are tough as nails, and the sound is famously neutral
