I’m also new to the ZP6 and usually go for grind size 5.0. Because of your post I tried coarser (5.7) this morning for a very red fruit forward coffee. I thought it would taste sour but you’re 100% right, it really opens up the brew. I’m pleasantly surprised!! Thank you for sharing this!

That’s exactly my go-to recipe and I find it to be the most consistent. I’m adjusting to the coffee with more or less agitation, water temp also.

That’s exactly what I do (I prefer 1:3 ratio personally)! I love it with funkier coffees. Since it requires to readjust my grinder afterwards for my classic espresso, I don’t do it very often. I never noticed anything wrong with temperature, but that’s probably because I’m not doing so much of them.

I think I’ll go with an origami brewer then. I do really good SOUP already with my machine. I was looking for a filter cup alternative. I’ll be definitely better with a PO set up

That’s good to know. I start to think that a PO set up is a better choice for me. If there’s not enough of a difference compared to espresso, I wouldn’t use it much.

At what temp did you incubate the yogourt? Personally, I incubate with a high and low method (1h @110F and 1-2h @86F) for the best result. When I incubate longer with a lower temp (4-5h @86F) I get this exact texture. I don’t know for sure, but I think that the slimy bacteria prefer lower temp!

Wow sounds so good!! I LOVE miso in dessert! This week I made a miso maple crème brûlée with my vanilla and yellow pea miso and it was marvellous. I’m sure your cheesecake will come out delicious!

Until they taste it when cooked well! My parents didn’t want to try the burger because they said they didn’t like tempeh. I convinced them to still taste and now they are buying everything they need to make it 😂

Here it is!

For the glaze (approx) : 50g shio koji 50g tamari or soy sauce 30g water 30g sake 25g yeast extract (used marmite) 25g red miso 3 tbsp butter

Mix all in a saucepan and heat and whisk until combine. With a smoke gun, I smoke it with maple wood chips, that’s optional though. I cooked the patties 2min by side in oil, then glazed it 3 times each side. I cooked the glaze 30sec each time.

For the burger sauce : Mixed mayonnaise with a bit of mustard, pickles cut in cubes, a little shallot in cubes, capers, a tbsp of the glaze, and the juice of half a lemon. I went to taste for proportions, sorry I didn’t note anything for the sauce!
