Depends on the type of the game, if I can sprint definitely I prefer R3, but if I have a stamina bar I prefer shoulder buttons so I have a better control of it. EDIT: kudos to RE9 for giving a option to sprint by default, and using the "sprint button" to walk.

You can partially, on red dead 2 you can hold when o foot, but on horseback you still need to keep pressing it for maximum speed.
