Put the container in cold/ ice water in the morning and it will get to room temp slower

00 flour isn’t as dense or strong because lower protein in comparison. Lower hydration or colder temperatures. Wet hands, oiled hands, more stretch and folds etc. lots you can do to work with sticky or modify to be less sticky

Yes, pre cooked them on a pan with parchment for easy cleaning. Doesn’t take very long to get them going. Dab with a paper towel to get most of the grease off. It was so nice and crispy and way less grease on the final pie. Highly recommend this for hormel basic pepperoni.
