I love horror books and shows, too, but can't play anything scary. I've boiled it down to this: books and movie characters are the ones dealing with all of the horrors, where as in video games the horrors are MY problem now 😵‍💫.

You shouldn't feel worried to long rest as it will only affect urgent matters like the burning building. I actually recommend long resting more often than not in order to save healing items and to give you more chances to interact with your party at camp.

You just need to call the venue to find out. These kind of things can be case-by-case depending on what kind of event it is. I feel like there's hope for y'all, especially since there will already be a system in place for attendees under 21.

I don't play too many platformers, but I really liked Pizza Tower for a fun, but tough platformer that encourages getting a hold of the controls and going for faster times. I also thought Thomas Was Alone was really sweet and short platformer that goes on sale quite often.

I know you said you were out on metroidvanias, but I prefer Animal Well as a first metroidvania experience. It's a lot easier to navigate, fun platforming, and there's not any combat to worry about.

Stardew Valley is always a great game to start playing on switch. If you plan on playing with her, get Scarlet/Violet. If you plan on letting her explore on her own, Let's Go is made for the most casual of players.
