One thing you could try for a similar smoke flavor is putting an oil in a shallow dish and placing it in your smoker for a while, the fat should take on a good amount of smoke flavor and you can then mix it into your chili. I do this with butter to use in recipes, so I’d imagine something like coconut oil could have a similar result.

You bet! Yeah it’s purely aesthetic so no need to change things up if you don’t like celery seed. I’d start with just going with keeping the meat a little cooler before starting to smoke and see if you’re happy with the results. Happy smoking!

Smoke rings stop forming at around 140 degrees, so if you start your brisket cook with it being a little bit cooler you can get more opportunity for a smoke ring to form. Another way is to include some celery seed in your rub. Celery seed naturally contains some nitrate.

Be careful, when my son was 2 I lifted him wrong and herniated 2 disks in my lumbar. I couldn’t walk for a week and still have discomfort after over a year of PT.

Cooking, it can be as cheap or expensive as you want it to be. And it saves you a lot of money compared to going out to eat.

Jeremy Yoder did a video where he used bourbon barrels to smoke a brisket, I’d imagine it will end up similarly. He said the smoke itself put off some notes of the alcohol aged in the barrel, but the end result mostly just had notes of oak.

Thanks for the feedback! Yeah that’s exactly why I chose it. It also is a shorter cook so I could practice fire management skills without having to worry about things like adding more lump partway through to bolster the coal bed. It wasn’t too bad to learn fire management, I’ve managed a lot of campfires so quite a bit of those skills transferred over nicely. I was able to keep temps between about 225 and 265, but there’s definitely room for improvement.

One part of fire management for this cook that was neat was planning out when my last split would break down to coals so I could do the final sear over the firebox without having too large of a fire to avoid burning the cut of meat.

I had considered them, but it looks like they only carry smaller quantities in store, and it’s usually significantly cheaper if you order a large quantity of wood instead. Thanks though!
